Farklı zamanlarda hasat edilen Trabzon hurması (Diospyros kaki L) meyvelerinin fizyolojik ve kimyasal yapılarında meydana gelen değişmeler
Bu çalışma ile bölgede yaygın olarak yetiştiriciliği yapılan Trabzon hurması meyvelerinde yüksek kalitede hasat ve yeme olumunun sağlanması amacıyla, farklı olgunluk aşamalarında kimyasal yapılarındaki değişim saptanmıştır. Bu amaçla, yörede üreticilerin yaygın olarak hasada başladığı Kasım ayının üçüncü haftası esas alınmış, bu tarihten önceki ve sonraki dönemlerde yedi günlük aralarla yapılan hasatlarla meyve eti sertliği (MES), suda çözünebilir kuru madde (SÇKM), askorbik asit, tanen, pektin ve toplam şeker içeriği gibi özelliklerdeki değişimler incelenmiştir. Bulgularımıza göre, MES ve pektin içerikleri yönünden 3. ve 4. hasat dönemlerinde alınan meyvelerin depolama ve pazarlama aşamasında en uygun sonucu verebileceği saptanırken, SÇKM oranı ve toplam şeker içeriği hasat dönemlerinde birbirlerine çok yalan ve tüketim için yeterli seviyede bulunmuş ancak meyvedeki yüksek tanen düzeyinin bu durumu gölgelediği tespit edilmiştir. Aşırı olgunluk döneminde hasat edilen meyvelerde ise tanen miktarındaki değişimin yeme olumuna olumlu etkisi olacağı ancak meyvelerdeki aşırı yumuşama ve askorbik asit değerinde önemli azalmalar olacağı dolayısıyla beslenme yönünden olumsuz etkileneceği sonucuna varılmıştır. Sonuç olarak Çanakkale yöresinde bu çalışmada incelenen Trabzon hurması meyvelerin 3. hasat döneminden sonraki periyotlarda hasat edilmesiyle, en yüksek kalitede pazara sunulmasının mümkün olduğu, ancak yeme olumunda yüksek kalitenin elde edilmesi için mutlaka tanenden kaynaklanan burukluğun giderilmesine yönelik uygulamalar yapılması gerektiği kanısına varılmıştır.
Chemical and physiological changes in persimmons (Diospyros kaki L.) harvested in different time periods
Persimmon has gained a significant concern in Turkey and therefore studies on the subject have been accelerated in recent years. In Çanakkale- Umurbey district the potential of Persimmon cultivation is desired to be increased. With this study, it is aimed to determine the proper harvesting time for catching the best eating maturity of persimmon lots cultivated in the district. For harvesting maturity studies; the thirdweek of November which district producers use to initiate harvest, considered as the harvesting time and changes in fruit quality were tried to be determined by 7 day intervals before and after this time. For fruit firmnes, the best values obtained from 3rd, 4th and 5th harvesting times. Soluble solids(%) values were found to be very closer to eachother and also sufficient for consumption at every harvesting time. Nevertheless, high levels 'of tannin was found to overshadow this matter which supported by the total sugar analyses. As conclusion; fruits can be harvested after 3rd harvesting time for marketing but some treatments are crucial for dispelling the astringentment derived from tannin.
