Işınlamanın Gıda teknolojisinde kullanımı

Gıda ışınlama gıda kaynaklı hastalık riskini azaltan güvenli bir teknoloji olarak tanımlanmaktadır. Gıda ışınlama, mikroorganizmaların, parazitlerin ve böceklerin gelişimi ile depolama ve dağıtım sırasında oluşabilecek ciddi kayıpları kontrol altında tutabileceği öngörülen yöntemlerden biridir. Gıda ışınlama işlemi zararlı bakteri ve diğer organizmaları yıkımlamak için gıdayı iyonize enerji kaynağına maruz bırakmaktır. Işınlama bazı gıdaların raf ömrünü uzatabilen ve gıda güvenliğini artırabilen bir yöntemdir. Bu makalede ışınlamanın gıda ürünlerinin muhafazasında kullanımı ele alınmıştır.

Usage of irradiation for Food technology

Food irradiation has been identified as a safe technology to reduce the risk of foodborne illness. Food irradiation is one of the methods to be considered to control the presence of microorganisms, parasites and insects, and to control severe losses during storage and transportation. Food irradiation utilizes a source of ionizing energy that passes through food to destroy harmful bacteria and other organisms. It is capable of improving the safety of many foods, and extending their shelf life. In this paper, the use of irradiation in food products preservation were reviewed.
