Levrek (Dicentrarchus labrax L.,1758) ve çipura (Sparus aurata L.,1758) yumurtalarının biyokimyasal kompozisyonu

Bu araştırmada levrek (D. labrax) ve çipura (S. aurata), balıkları döllenmiş yumurtalarının biyokimyasal kompozisyonunu, % protein, nem, kül, yağ ve yağ asitleri analizleri yapılarak belirlenmiştir. Levrek yumurtasında yapılan analizlerde; nem %74.25±0.615, protein %11.57±0.252, kül %2.57±0.078 ve yağ% 4.97+0.075 olarak saptanmıştır. Araştırma sonucunda levrekte doymuş yağ asitleri %28.74±1.020, MUFA %39.05±0.067, PUFA %31.36+0.020. olarak belirlenmiştir. Çipura yumurtasında yapılan analizlerde; nem %79.851±04, protein %9.83±0.15, kül %2.85+0.06 ve yağ %2.29+0.11 olarak saptanmıştır. Çipurada doymuş yağ asitleri %40.45+0.612, MUFA %34.40+0.130, PUFA %24.68±0.341 olarak belirlenmiştir.

Biochemical compostion of seabass (Dicentrarchus labrax L.,1758) and sea bream (Sparus aurata L.,1758) eggs

In this study biochemical composition of seabass (D. labrax) and sea bream (S. aurata), eggs were examined and their protein, moisture, oil, ash and fatty acids content analysized. The results showed that, seabass eggs have 74.25±0.615% moisture, 11.57+0.252% protein, 2.57+0.078% ash and 4.97+0.075% oil. Result showed that in seabass eggs contain 28.74+1.020% saturated fatty acid, 39.05+0.067% MUFA and 31.36±0.020% PUFA. In sea bream eggs 79.85+1.04% moisture, 9.83±0.15% protein, 2.85+0.06% ash and 2.29+0.11% oil were found. As a result of resarch carried aut in sea bream eggs have 40.45±0.612% saturated fatty acid, 34.40±0.130% MUFA and 24.68+0.341% PUFA.
