Obeziteile Mücadelede Yeni Bir Yaklaşım: Digliserit Yağ

Son yıllarda digliserit yağın yemeklik yağ olarak kullanımına yönelik çalışmalar ilgi odağı haline gelmiştir. Yemeklik digliserit yağ sıvı karakterde olup, yaklaşık %80-81 oranında digliserit içermektedir. Fizikokimyasal özellikleri bakımından trigliserit yağlara oldukça benzerlik gösteren bu yağın ayrıca yeni ürün geliştirmeye yönelik kendine has kristalizasyon ve plastisite özellikleri de vardır. İnsanlarda ve hayvan besleme deneyleri ile yapılan çalışmalarda, digliserit yağın trigliserit yağdan farklı bir şekilde metabolize olduğu; bu nedenle de digliserit yağın, vücuttaki yağ kitlesinin azalmasında, hipertrigliseridemi ve beraberinde seyreden hipertansiyonun baskılanmasında, kalp damar sağlığı bakımından yüksek risk grubundaki bireylerin kan serumundaki lipit ve insülin değerlerindeki dalgalanmaların kontrol altına alınmasında etkili olduğu bildirilmiştir. Bu makalede digliserit yağ ve sağlık ilişkisi hakkında bilgi verilmiştir.

A New Approach to Counteracting Obesity: Diacylglycerol Oil (Turkish with English Abstract)

Recent years studies on the use of diacylglycerol oil in as edible oil has become focus of attention. Diacylglycerol oil has liquid character and contains about 80-81% of diglycerides. Diacylglycerol oil is very similar to triacylglycerol oil in terms of physicochemical properties. Besides, it has unique crystallization and plasticity characteristics features for the development of new products. Human studies and animal feeding experiments have shown that diacylglycerol oil is metabolized in a different pathway than that of triacylglycerol oil. Therefore, diacylglycerol oil has been reported to be effective on decreasing body fat mass, suppression of hypertriglyceridemia together with hypertension, controlling fluctuations of blood serum lipids and insulin in high risk-group individuals for cardiovascular problems. This article provides information about the relationship between diacylglycerol oil and health.
