KEÇİ SÜTÜ KALİTESİNDE YENİ GELİŞMELERE BİR BAKIŞ

Günümüzde insan beslenmesinde son derece önemli yararlı etkileri tespit edilmiş olan keçi sütü ve ürünlerine talep hızlı bir biçimde artmakta, gerek keçilerin kolay bakım ve beslenmeleri gerekse sütünün üstün özelliklerinden dolayı keçi yetiştiriciliği önem kazanmaktadır. Günümüzde keçi sütünün sağlık üzerine olumlu etkilerinin anlaşılmasından dolayı son yıllarda keçi sütü ile ilgili araştırma sayısı artış göstermiştir. Keçi sütü ve keçi peynirinin kalitesini arttırmak için keçi diyetinde bulunan yemlerin tanımlanması, kalite kontrol için yeni sensörler geliştirilmesi, yeni ürünlerin geliştirilmesi gibi geliştirilen yeni yöntemlerle bu ürünlerin tüketimi giderek artmaktadır. Bu makalede keçi sütünün kalitesinin arttırılmasına yönelik yeni gelişmelerle alakalı son çalışmalara değinilecektir ve sonuçlanmış çalışmaların uygulanabilirliği tartışılacaktır.
