Farklı Bölgelerden Toplanan Arı Polenlerinin Fizikokimyasal Özellikleri ve Şeker Profillerinin Belirlenmesi

Çalışma kapsamında, zengin bitki örtüsüne sahip ülkemizin 6 farklı bölgesindeki 21 farklı ilinde üretilen 34 adet arı poleni örneklerininnem, kül, protein, yağ, lif değerleri ve şeker profili araştırılmıştır. Elde edilen sonuçlardan numunelerin karbonhidrat ve enerji değerlerihesaplanmıştır. Çalışma sonunda ortalama protein %18,8±3,2; yağ %7,6±1,6; kül %2±0,5; lif %14,4±2,7; toplam şeker %40,9±6,4;karbonhidrat değeri %54,6±5,8; glukoz miktarı %14,8±1,9; fruktoz miktarı %19,5±2,0; sakaroz miktarı %3,8±3,4; maltoz miktarı%0,9±0,6 ve turanoz miktarı %1,2±0,6 olarak saptanmıştır. Şekerlerden izomaltoz ve erloz sadece birkaç numunede tespit edilmiş,trehaloz, melezitoz, maltotrioz ise genel olarak numunelerde belirlenememiştir. İstatiksel olarak analiz sonuçları değerlendirildiğindeprotein miktarı dışındaki parametrelerde bölgeler arasında önemli bir farklılıklar olduğu belirlenmiştir (p>0.05). Özellikle DoğuAnadolu bölgesinden sağlanan polenlerin diğer bölgelerden sağlananlara göre birçok parametrede ayrıldığı görülmektedir.

Determination of Physicochemical Characteristics and Sugar Compositions of Bee Pollens Obtained From Different Regions

In this study were observed 34 bee pollen samples produced in 21 different provinces in 6 region of Turkey regarding to moisture, ash, protein, fat, fiber and total sugar parameters. Carbohydrate and energy values of samples were calculated. At the end of the study, the mean values were found as 18.8% ± 3.2 protein, 7.6% ± 1.6 fat, 2% ± 0.5 ash, 14.4% ± 2.7 fiber and 40.9% ± 6.4 total sugar, 54,6 ±5,8% carbohydrate, 14.8 ± 1.9% glucose; 19.5 ± 2.0% fructose; 3.8 ± 3.4% sucrose; 0.9 ± 0.6% maltose; 1.2 ± 0.6% turanose; 0.3 ± 0.6%. It was observed that isomaltose and erlose sugars were only found in a few samples and trehalose, melesitose and maltotriose sugars were not found in the samples in general. When the results of the analysis were evaluated statistically, it was determined that there were significant differences between the regions without protein parameter. It is seen that pollen obtained from Eastern Anatolia region is separated from other regions in many parameters.
