Etlik Piliçlerde Kesim Öncesi Yönetimin Stres ve Et Kalitesi Üzerine Etkileri

Özbilgi/Amaç: Kesim öncesi yönetim, hayvanın kesimden önce maruz kaldığı tüm aktivite ve işlemleri kapsar. Kısa bir süreyi kapsamakla birlikte, kesim öncesi uygulamalar hayvanın refahı ve et kalitesini önemli düzeyde etkilemektedir. Bu süreçte diğer hayvan türlerinde olduğu gibi piliçler de fiziksel ve psikolojik kaynaklı çeşitli stres faktörlerine maruz kalırlar. Bu işlemlerin yarattığı korku ve stres hayvanın fizyolojik durumunu etkileyerek homeostatik dengesini değiştirmekte ve sonuçta kesim sonrası kasın ete dönüşmesi sırasındaki biyokimyasal olayları etkileyerek et kalitesini belirlemektedir. Bu derlemenin amacı, etlik piliçlerde kesim öncesi yönetimin stres ve et kalitesi üzerine etkileri hakkında bilgi verebilmektir. Sonuç: Etlik piliçlerde kesim öncesi işlemler hayvanlar üzerinde değişik düzeylerde stres oluşturarak refah ve et kalitesini olumsuz etkilemekte ve ekonomik kayıplara yol açmaktadır. Kesim öncesi yönetim koşullarını iyileştirmek gerek hayvan refahı ve et kalitesinin iyileşmesi, gerekse ölüm oranlarından kaynaklanabilecek ekonomik kayıpları azaltma bakımından önemlidir.

The Effects of Pre-slaughter Management on Stress and Meat Qality in Broilers

Background/Aim: Preslaughter management comprises all activities and process of which the animal exposed during the pre-slaughter period. Preslaughter management has important effect on welfare and meat quality in broilers, although including a short period of times. In this process, broilers are exposed to a variety of physical and psychological stress factors. Fear and stress created by these processes affect the physiological state of the animal and alter homeostatic balance and thus determine meat quality by affecting the biochemical events during the muscle is transformed into meat. The purpose of this review is to give information about the effects of pre-slaughter management on stress and meat quality in broilers. Conclusion: Pre-slaughter processes cause to stress on broilers at various levels and negatively affect welfare and meat quality and thus leading to economic losses. Improving pre-slaughter management conditions is crucial to improving animal welfare and meat quality, and reducing economic losses due to death rates.
