GIDA HAFIZASININ FARKLI YAŞ GRUPLARINDA İNCELENMESİ

Bu çalışmanın amacı tat, koku gibi bir duyulardan bir sayılabilecek gıda hafızasının farklı yaş gruplarındaki durumunu görebilmektir. Bu amaçla 92 kişiye gıda hafızalarındaki anıları ortaya çıkarabileceği düşünülen ve literatürdeki çalışmalardan esinlenerek hazırlanan 7 soru içeren bilgi edinme formu kullanılmıştır. Az soru sorarak katılımcıların sorulara konsantre olması amaçlanmıştır. Bilgi edinme formu 18-39 yaş aralığındaki 46 katılımcıya, 40-60 yaş aralığında da 46 katılımcıya verilmiştir. Bilgi edinme formuna verilen yanıtlarla niceliksel bir değerlendirme yapılmıştır. Verilen yanıtlar değerlendirilirken en çok tekrar edilen yiyecekler belirlenmiş ve elde edilen veriler Türk mutfak kültürü ve yeme alışkanlıklarıyla antropolojik olarak yorumlanmıştır. Sonuçlar göstermektedir ki 40-60 yaş grubundaki katılımcılar 18-39 yaş grubundaki katılımcılara göre geleneksel yemekleri daha çok hatırlamakta ve tercih etmektedir. Genç grupta ise hazır gıda tüketiminin daha yaygın olduğu, ancak her iki grubun da kültürel bilgi aktarımından etkilendiği anlaşılmıştır. Ayrıca her iki grubun da yabancı gıdalara karşı gıda neofibisi taşıdığı anlaşılmıştır.
