Sıcak Beyaz (Sarı) Renkli LED ile Kurutmanın Fındığın (Corylus avellana L.) Kuruma Karakteristiklerine Etkisi
Fındığın anavatanı olan Karadeniz Bölgesi hasat döneminde oldukça yağışlı ve nemlidir. Bu
nedenle hasat edilen fındığın geleneksel yöntemle kurutulması durumunda kurutma süresi
uzamakta ve fındıkta çürüme meydana gelmektedir. Bu durum fındığın kalitesini ve raf ömrünü
düşürmekte, fındıkta aflatoksin oluşumuna sebep olmaktadır. Fındıkta oluşan olumsuz etkilerden
kurtulmak için farklı mekanizmalarla fındıktan kütle transferi gerçekleştirilmektedir. Bu deneysel
çalışmada, daha az enerji ile kısa sürede ve gıda özelliklerini koruyacak şekilde fındığın mekanik
kurutulmasını sağlamak için sıcak beyaz (sarı) 3000K renk sıcaklığına sahip LED‘li bir tünel tipli
kurutma sistemi kullanılmıştır. Kurulan sistem içerisinde fındık iki farklı çap aralığında (14-15
mm, 16-17 mm) ve dört farklı hava hızında (v=0 m/s, v=0,5 m/s, v=1 m/s ve v=1,5 m/s)
kurutulmuştur. Ayrıca, karşılaştırma yapabilmek için fındık, fırın ve güneşte de kurutulmuştur .
Etüvde kurutma ve v=0,5, 1,0 ve 1,5 m/s hava hızlarındaki Led’li kurutma, güneşte kurutma ile
karşılaştırıldığında kurutma işlemi sırasıyla, %41, %65, %67 ve %72 daha kısa sürede
gerçekleşmiştir. LED’li kurutmada fındık iç sıcaklığı, artan hava hızına (0,5 m/s, 1 m/s, ve 1,5
m/s) bağlı olarak maksimum % 25 düşmektedir. Aynı zamanda fındık boyutunun artması kuruma
süresini maksimum % 15 daha artırmaktadır.
White Influence of Warm White (Yellow) Color LED Drying Technique on Drying Charateristics of Hazelnut (Corylus avellana L.)
The weather is very rainy and moist during the harvesting season at the Black Sea Region in
Turkey which is the homeland of hazelnut. For this reason, if the harvested hazelnut is dried by
the conventional method, the drying period is prolonged and putrefaction is occurred in hazelnut.
This situation decreases the quality and shelf life of hazelnut and causes aflatoxin formation in
hazelnut. Mass transfer from hazelnut is carried out mechanically to get rid of the adverse effects
that occur in nuts. In this experimental work, a tunnel type drying system with LED warm white
(yellow) 3000 K color temperature was used to provide mechanical drying of the hazelnut in a
short time with less energy and to preserve of food properties. The hazelnut was dried in two
different sizes (14-15 mm, 16-17 mm) and four different air velocities (v=0 m/s, v=0,5 m /s, v=1
m/s and v=1.5 m/s). Also, hazelnuts were dried in oven and sun in order to make comparisons.
According to this comparison results, the drying times with oven and LED at air velocities of v =
0,5 m / s, v = 1,0 m / s and v = 1,5 m / s were found to be shorter than that with sun as 41%, 65%
67 and 72%, respectively.
