YİYECEK İÇECEK İŞLETMELERİNDE TEDARİK ZİNCİRİ VE BLOKZİNCİR TEKNOLOJİSİ
Yiyecek içecek işletmelerinde teknolojik yenilikler ve uygulamalar yoğun bir şekilde kullanılmaktadır. Bu yeniliklerin ve
uygulamaların yiyecek içecek işletmelerine rekabet üstünlüğü, farklılık ve özgünlük kazandırdığı görülmektedir. Yiyecek
içecek işletmelerine farklı bir boyut sağlayabilecek teknolojik yeniliklerden biri de blokzincir teknolojisidir. Bu doğrultuda
araştırma, blokzincir teknolojisinin yiyecek içecek işletmelerinin tedarik zinciri sürecinde kullanılması durumunda işletmelere
sağlayacağı olası avantajlarını değerlendirmeyi amaçlamaktadır. Araştırma kavramsal bir çalışma olup, blokzincir teknolojisi
ile ilgili detaylı bir literatür taraması yapılmış ve yiyecek içecek işletmelerinde tedarik zinciriyle ilişkilendirilerek
değerlendirilmiştir. Literatür taraması sonucunda blokzincir teknolojisinin yiyecek içecek işletmelerinde kullanımının ortaya
çıkarabileceği avantajlar, “izlenebilirlik ve şeffaflık”, “güvenilirlik” ve “verimlilik” olmak üzere üç başlık altında toplanmıştır.
