Bifidojenik Faktör Olarak Laktoz Türevlerinin Önemi

Laktoz sadece memeli hayvanların sütlerinde bulunan bir disakkarittir. Oldukça düşük tatlandırma gücü, kalori değeri ve glisemik indeksi nedeniyle dikkat çekici besleyici bir özelliğe sahiptir. Aynı zamanda, diyet lif benzeri prebiyotik özelliğe sahip olup kalsiyum ve magnezyumun biyoyararlılığını arttırmaktadır. Laktoz türevleri olan laktuloz, laktitol, laktobionik asit ve tagatoz gıdalarda ve farmasötik karışımlarda bağırsak sağlığını iyileştirici prebiyotik olarak yer almaktadır. Bifidobacterium türleri probiyotik mikroorganizma olarak sağlık üzerine olumlu etkileri nedeniyle farklı gıda ürünlerinde geniş ölçüde kullanılmaktadırlar. Bu derlemenin amacı, ticari olarak üretilen laktoz türevlerinin bifidojenik faktör olarak Bifidobacterium türlerinin gelişmelerini destekleme yeteneklerini özetlemektir.
