ZENGİNLEŞTİRİLMİŞ VE GÜÇLENDİRİLMİŞ GIDALARIN SAĞLIK ÜZERİNE ÖNEMİ VE ÇEŞİTLİ ÜLKELERDE UYGULANMASI
Geçmişte ve günümüzde halk sağlığı sorunlarının çoğunun altında doğru beslenememe yatmaktadır. Bu sorunların çözümüiçin bireysel ve toplumsal önlemler alınması gerekmektedir. Toplumsal düzeyde alınan önlemler ulusal ya da uluslar arasıplatformlarda farklılık gösterebilmektedir. Alınan uluslararası önlemler arasında, özellikle anne sütü ile beslenme sıklığınınartırılması örnek verilebilir. Bunu takiben, beslenme eğitimi programları, beslenme açısından riskli ve duyarlı olan gruplarayönelik özel eğitim ve müdahale programlarının yaygınlaştırılması ile toplumda görülme sıklığı yüksek olan beslenme sorun-larının çözümü için besin zenginleştirilmesi ya da besin güçlendirilmesi uygulamaları da yer almaktadır. Besin zenginleştirmeve güçlendirme işlemleri FDA (Gıda ve İlaç İdaresi) tarafından kontrol altında uygulanmakta olup 1900’ lü yıllarda başlamıştır;bu yıllarda ilk olarak eklenen besin öğelerinin başında iyot (tuz) ve D vitamini (süt) gelmektedir. Derlememizde, tüm dünyadayaygın olarak uygulanan besin zenginleştirme ve güçlendirme işlemlerinin önemi ve uygulama yollarının bazı örneklerle gös-terimi amaçlanmıştır.WHO (Dünya Sağlık Örgütü), Pubmed, Sağlık Bakanlığı, gibi bilimsel sitelere ulaşılarak, “fortified”, “enriched”, “food”, ‘‘micro-nutrients’’, ‘‘supplement’’, ‘‘fortified bread’’, “gıda takviyeleri”, ‘‘zenginleştirilmiş gıda’’ kelimeleri ile konu hakkındaki raporla-ra ve bilimsel literatürlere ulaşılmıştır. Bu doğrultuda günümüzde uygulanan, sağlığa olumlu etkisi için gıdalara eklenebilecekDestek/Katkı maddelerinin beklenen faydası ve ülkelere göre kanunla düzenlenen Destek/Katkı maddeleri tablolar halindehazırlanmıştır.Bu tür uygulamalar, koruyucu hekimlik yönünden oldukça önemlidir. Böylece, önlenebilecek hastalıklar engellenerek dahasağlıklı bir toplum yaratılmaya çalışılır. Pek çok ülkede devlet tarafından kontrol edilir ve hatta uygulama zorunluluğu vardır.Kontrol edilmediğinde, yetersiz ilave sağlık otoritelerini yanıltabilir. Öte taraftan, gıdalarımıza yeterince katıldığı halde, top-lumda hali hazırda mevcut sorun olan vitamin/mineral suiistimali ile birlikte fazla mineral/vitamin maruziyetine neden olabilir.Alkol ve şeker gibi zararlı olabilecek maddedeler vitamin takviyesi, toplum algısını bozarak, bu ürünlerin artık zaralı olmadığıkonusunda inanç geliştirebilir. Bu derlemenin, ülkemizde besin güçlendirme ve zenginleştirme çalışmaları ile diğer ülkelerinkarşılaştırılmasına fayda sağlayacağını düşünmekteyiz.
The Importance of Enriched and Fortified Foods on Health and Practices in Some Countries
The underlying mechanism of many public health problems is inadequate nutrition in the past or now. For tackling the problems, individual or public precautions should be taken. The precautions in the community at national or international platforms can be different from each other. Indeed, increasing of breastfeeding can be an example of international precaution. Consequently, for the aiming of solving the present nutrition problems food enrichment or food fortification can be practiced with the education programs of feeding, wide-spreading of special education and training of vulnerable groups. Food enrichment and food fortification applications are under the control of FDA and back dated to 1900’s; the first additives of food were mainly iodine (salt) and vitamin D (milk) at these days. In our review, it is aim to illustrate the importance and the way of food enrichment and food fortification applications with some examples. Some of scientific web pages such as WHO, PubMed, Turkish Ministry of Health has been screened and giving the key words of fortified”, “enriched”, “food”, ‘‘micronutrients’’, ‘‘supplement’’, ‘‘fortified bread’’, “food supplements”, ‘‘enriched food’’ relevant reports and literatures have been obtained. Then, expectation of health benefits and regulations of some countries with the supplements of food for the aiming of positive impact on health prepared on the tables. These applications are highly important on preventive medicine. It controls by the government and also has been an obligation in many countries. If it has not controlled, inadequate amount can falsly lead the health authorities. On the other hand, even it has added enoughly in our foods, the abuse of vitamin/mineral which is a presently common problem can results in excess vitamin/mineral exposures. Addition of these supplements in alcohol and candies can break the perception of community and develop a belief as if these products are not harmful after all. We think that this review gives us an opportunity to compare our countries food enrichment and fortification practices with the other countries.
