Ahtapotun (Octopus vulgaris) metal düzeylerinin değerlendirilmesi: sağlık riskleri tahmini

Mersin Körfezi’nden kış, ilkbahar ve yaz mevsimlerinde avlanan Octopus vulgaris türü ahtapotun manto ve kol dokularındaki 13 farklı metalin (Mg, P, K, Fe, Cu, Zn, Mn, Se, Al, Cr, As, Cd ve Pb) düzeyleri belirlenmiştir. Bulguların dokular ve mevsimler arası karşılaştırmaları yapılmıştır. Ekonomik açıdan önemli bir tür olan ahtapotların tüketiminin tüketici sağlığı açısından olası riskleri, yetişkin ve çocuk tüketicilerin öğünlerinde haftada 1, 3 ya da 5 gün ahtapot tüketmeleri olasılıkları doğrultusunda değerlendirilmiştir. Bu kapsamda Haftalık Tahmini Alım Düzeyi (EWI), kanserojen olmayan Hedef Tehlike Oranı (THQ) ve Yaşam Boyu Kanserojen Riski (CR) hesaplamaları yapılmıştır. Pb düzeyinin FAO, AB ve Türk Gıda Kodeksi tarafından belirlenen limit düzeyin üzerinde olduğu tespit edilmiştir. EWI değerlerinin, EFSA ve FAO/WHO tarafından belirlenen PTWI değerlerinin altında olduğu belirlenmiştir. Tüketici açısından kanser dışı sağlık risklerinin göstergesi olan THQ ve ∑THQ değerlerinin 10-5 ) tüketici için kanserojen risk teşkil ettiği ancak Pb değerlerinin risk teşkil etmediği belirlenmiştir.
