Van Piyasasinda tüketime sunulan fermente Türk sucuklarinin fiziksel kimyasal mikrobiyolojik ve organoleptik niteliklerinin incelenmesi
Bu araştırma, Van'da tüketime sunulan fermente sucuklarda halk sağlığı yönünden önemli olan bakterilerin bulunma düzeylerini saptamak, fiziksel, kimyasal ve organoleptik kalite niteliklerini tespit etmek ve elde edilen sonuçların ilgili standartlar ile Gıda Maddeleri Tüzüğüne uygunluğunu belirlemek amacıyla yapıldı. Araştırmada, Van piyasasından toplanan 50 adet fermente sucuk numunesi mikrobiyolojik, fiziksel, kimyasal ve duyusal yönlerden incelendi. Fermente sucukların mikrobiyolojik analizleri sonucunda ortalama genel koloni, koliform, E.coli, fekal streptokok, stafilokok, koagulaz pozitif stafilokok, Cl. perfringens ve maya-küf sayıları sırasıyla; 3.3x108/gr., 5.2x103/gr., 4.6x103/gr., 5.1x103/gr.,6.7x104/gr., 1.9x103/gr., 1.7x103/gr. ve 7.3x105/gr. olarak saptandı. Numunelerin hiçbirinde salmonella grubu mikroorganizma belirlenemedi. Kimyasal ve fiziksel analizler sonucunda numunelerin ortalama rutubet, yağ, tuz, kül ve protein miktarları sırasıyla; %38.57, %36.13, %4.12, %3.99 ve %16.43; pH değeri 5.50; Su aktivitesi (Aw) değeri 0.91 olarak bulundu. Numunelerin duyusal analizleri sonucunda %16'sının 1.sınıf, %24'ünün 2. sınıf olduğu belirlendi, %60'ının ise mevcut sınıflandırmaya girmediği görüldü. Van piyasasında tüketime sunulan fermente sucukların mikrobiyolojik açıdan E.coli gözönüne alındığında %36'sının, kimyasal açıdan rutubet, protein, tuz ve pH değerine göre sırasıyla %34, %60, %14 ve %74'ünün standart ve Gıda Maddeleri Tüzüğü'ne uygun olmadığı tespit edildi. Sonuç olarak; kontrol edilen fermente sucuk numunelerinin mikrobiyolojik, fiziksel, kimyasal ve duyusal nitelikleri yönünden oldukça düşük kalitede olduğu ve büyük bir kısmının standart ve Gıda Maddeleri Tüzüğü'ne uygun olmadığı görüldü.
Studies on the physical chemical microbiological and organoleptical properties of the Turkish fermented sausages consumed in Van
This study was carried out to determine the level of presence of bacteria in fermented sausages consumed in Van, which is important for public health, and to find out if they are produced in accordance with standarts and Food Regulation. In the study, 50 samples of the Turkish fermented sausages collected in Van were analysed in terms of microbiological, chemical, physical and organoleptical features. In the microbiological analyses of the Turkish fermented sausages, the avarage values of the total colony, coliforrg, E. coli, fejal streptococ, staphylocjc, coagulaşe positive staphylococ, ÇI. perfringens agd yeast-mould were found to be 3.3x10 /gr., 5.2x10 /gr., 4.6x10 /gr., 5.1x10 /gr., 6.7x10 /gr., 1.9x10 /gr., 1.7x10 /gr. and 7.3x10 /gr. respectively. In the chemical and physical analyses of the samples, the avarage values of moisture, fat, salt, ash, and protein contents were found to be 38.57%, 36.13%, 4.12%, 3.99%, 16.43% respectively. The average value of pH and water activity (Aw) were found to be 5.50 and 0.91 respectively. As a result of organoleptic analyses 16% of samples was determined to be in the first class and 24% in the second class. 60% did not enter the prensent clasification. When the fermented sausages consumed in Van were examined microbiologically, it was found that 36% was not in accordance with standarts and Food Regulation in respect of E coli, when examined chemically, moisture, protein.salt and pH values were 34%, 60%, 14% and 74% respectively and did not conform to standarts and Food Regulation. As a result, microbiological, physical, chemical and organoleptical properties of examined fermented sausage samples were found to be of rather low quality and most of them were not in accordance with standarts and Food Regulation. Cautious should be taken for improving sausage quality.
