Gıdamız Buğdayın, Geçmişten Geleceğe Yolculuğu

Özet 1 :Özet   Türkiye'nin güneydoğusunu da içine alan, Bereketli Hilal olarak adlandırılan bölgede arpa, bezelye, mercimek, nohut,  keten, acı fiğ ile birlikte evcilleştirildiğinden bu yana buğday insanların başlıca gıda kaynağı olmuştur. Ülkemizde ve dünyanın birçok yerinde ekmek yiyecekle aynı anlamda kullanılmaktadır. İnsanın buğdayla ilişkisi avcı-toplayıcı dönemde başlamıştır. Yerleşik düzene geçişle birlikte (M.Ö. 8500) yiyecek kaynakları bulmak gerekiyordu. Buğday ve arpa en uygun bitkisel kaynak olarak öne çıkmıştır. Son yıllarda bazı bilim insanları Batı medeniyetin temelinin Yunan Medeniyeti değil, Sümer Medeniyeti olduğunu belirtmektedir. Bereketli Hilal'de yükselen Sümer Medeniyeti'nin temel kaynakları tahıl ve küçükbaş hayvan yetiştiriciliği idi. Tahıllar içerisinde ise buğday, arpa ve baklagiller günümüzde olduğu gibi en önemli türlerdi.  Daha sonra bu bölgeden dünyaya yayılan buğday, günümüze kadar nerdeyse tüm kıtalarda insanların temel besini olmuştur. Buğday dünyada en çok ekilen ve gıda olarak tüketilen tahıldır. İnsanlar günlük enerji ihtiyaçlarının yarısına yakınını buğdaydan sağlamaktadırlar. Yapılan çalışmalar önümüzdeki 20-30 yılda da bu durumun devam edeceğini öngörmektedir. Artan ve yetersiz beslenen nüfusu beslemek için ciddi üretim artışı gerekmektedir. Ancak gelişmiş ve dünya buğday üretiminin büyük kısmını karşılayan ülkelerde yaklaşık son 20 yıldır buğdayda verim artışı olmamakta, ya da çok az olmaktadır. Bu durumda açığın büyük kısmı buğday üretim potansiyelinin çok altında verim alan gelişmekte olan ülkelerden karşılanacaktır. Üretim artışının ve sürdürülebilirliğinin önündeki engellerden en önemlileri sınırlı topak ve su kaynakları ile iklim değişikliğidir. Önümüzdeki yıllarda bu kaynakların kullanılması ve paylaşılması ile ilgili çatışmalar kaçınılmaz olacaktır. Ciddi kıtlık durumlarında belki de paranın satın alamayacağı tek şey gıda olacaktır.Özet 2 :AbstractThe wheat has been the main food source since it was domesticated with barley, peas, lentils, chickpeas, linen, bitter vetch in the area called the Fertile Crescent, which also includes the southern part of Turkey. In our country and many other country, bread is used in the same sense as food. The relation of man to wheat has begun in the hunter-gatherer period. With the permanent settlement (8500 BC) it was necessary to find food sources. Wheat and barley are the most suitable vegetable sources. In recent years, some scientists have pointed out that the basis of Western civilization is not the Greek Civilization but the Sumerian Civilization. The main sources of the Sumerian civilization, rising in the Fertile Crescent, were cereal and small cattle breeding. In cereals, wheat, barley and legumes were the most important species as they are today. Later, wheat spreading from this region to the other part of the world became the basic food of people in the whole continent. Wheat is most commonly cultivated and consumed as food grain in the world. People supply nearly half of their daily energy needs from the wheat. The studies suggest that this situation will continue in the next 20-30 years. Serious production increases are needed to feed the growing and malnourished population. However, in countries that have developed and meet most of world wheat production, there has been no increase in yield in wheat for the last 20 years, and very few have. In this case the majority of this gap will be meet by developing countries which yields below the potential. The most important obstacles to growth and sustainability of wheat production are limited clusters and water resources and climate change. Conflicts over the use and sharing of these resources in the coming years will be inevitable. In serious famine situations, perhaps the only thing that money can't buy is food.
