Slaughter and Carcass Traits of Güney Karaman, Kangal-Akkaraman and Akkaraman Lambs at Different Slaughter Weights

This study was carried out to investigate the slaughter and carcass traits of Güney Karaman, Kangal-Akkaraman and Akkaraman ram lambs at slaughter weights of 30, 35 and 40 kg. In this study, 6 ram lambs were used for each slaughter weight and genotype group (a total of 54 ram lambs). The lambs were slaughtered when they reached the slaughter weights mentioned above. All the carcasses were divided into five cuts, namely leg, shoulder, back, loin and others. In order to determine the carcass composition, the left halves of the carcass cuts were dissected. At the 30 kg slaughter weight, the carcass weight, dressing percentage, and the ratios of meat, fat, bone, leg, shoulder, back, loin and other weights in the carcass were found to be 14.03 kg, 46.69, 46.80, 16.58, 17.78, 30.04, 15.59, 7.75, 7.35 and 22.01 % respectively in the Güney Karaman lambs; 13.68 kg, 45.60, 52.23, 14.34, 19.62, 33.04, 16.89, 7.62, 7.35 and 22.43 % in the Kangal-Akkaraman lambs; and 13.68 kg, 45.60, 49.46, 16.49, 17.53, 31.76, 15.88, 7.56, 7.91 and 22.48 % in the Akkaraman lambs. At the 35 kg slaughter weight, these values were 16.57 kg, 46.38, 46.33, 16.27, 16.13, 29.32, 14.65, 7.40, 7.42 and 21.69 % in the Güney Karaman lambs; 15.80 kg, 45.25, 47.49, 16.11, 18.17, 31.13, 15.88, 7.06, 7.40 and 21.94 % in the Kangal-Akkaraman lambs; and 16.35 kg, 46.93, 47.49, 18.49, 16.55, 30.72, 15.67, 7.45, 7.99 and 21.80 % in the Akkaraman lambs. At the 40 kg slaughter weight, these values were 19.45 kg, 48.61, 41.61, 20.33, 14.77, 27.02, 13.69, 7.81, 7.75 and 21.58 % in the Güney Karaman lambs; 18.52 kg, 46.29, 47.82, 17.10, 17.44, 30.53, 15.49, 7.32, 7.70 and 22.53 % in the Kangal-Akkaraman lambs; and 20.19 kg, 50.26, 44.70, 21.36, 15.28, 29.98, 14.96, 7.77, 8.08 and 21.71 % in the Akkaraman lambs.

At the 35 kg slaughter weight, these values were 16.57 kg, 46.38, 46.33, 16.27, 16.13, 29.32, 14.65, 7.40, 7.42 and 21.69 % in the Güney Karaman lambs; 15.80 kg, 45.25, 47.49, 16.11, 18.17, 31.13, 15.88, 7.06, 7.40 and 21.94 % in the Kangal-Akkaraman lambs; and 16.35 kg, 46.93, 47.49, 18.49, 16.55, 30.72, 15.67, 7.45, 7.99 and 21.80 % in the Akkaraman lambs. At the 40 kg slaughter weight, these values were 19.45 kg, 48.61, 41.61, 20.33, 14.77, 27.02, 13.69, 7.81, 7.75 and 21.58 % in the Güney Karaman lambs; 18.52 kg, 46.29, 47.82, 17.10, 17.44, 30.53, 15.49, 7.32, 7.70 and 22.53 % in the Kangal-Akkaraman lambs; and 20.19 kg, 50.26, 44.70, 21.36, 15.28, 29.98, 14.96, 7.77, 8.08 and 21.71 % in the Akkaraman lambs.
