MENENGİCİN ŞEKERLEME ÜRETİMİNDE KULLANIM OLANAKLARI

Bu çalışmada güncel bir konu olan menengicin (Pistacia terebinthus) şeker endüstrisinde kullanım olanakları üzerinde durulmuştur. Bu amaçla temizlenen menengiçler iki kısma ayrılmıştır. Menengiçlerin bir kısmı kavrularak diğer kısmı da kavrulmadan şekerleme üretiminde kullanılmıştır. Şekerle kaplanan menengiçlerde fiziksel ve kimyasal analizler yanında, tüketici beğenisini ölçmek üzere duyusal değerlendirme yapılmıştır. Yapılan analizler sonucunda kavrulmuş ve kavrulmamış menengiçlerden elde edilen şekerlemelerde sırasıyla kül oranı; %1.83 ve %1.23 , nem oranı; % 2.67 ve %3.78 , şeker oranı %70 ve %60 olduğu tespit edilmiştir. Duyusal değerlendirmeler sonucunda menengiç şekerlemesinin panelistler tarafından büyük beğeni kazandığı, kavrulmuş menengiç şekerlemelerinin kavurmanın etkisiyle tat ve aromada meydana gelen değişimlerden dolayı daha yüksek puan aldığı görülmüştür.

POSSIBLE USE OF TEREBINTH FOR CONFECTIONERY PRODUCTION

In this study the possibilities of usage menengic (Pistacia terebinthus) in candy industry were investigated. For this purpose two types of candy were prepared from raw and roasted menengicfruits. The candy samples were analysed for chemical, physical and sensory properties. The contents of ash, moisture and sugar were 1.83% and 1.23%; 2.67% and 3.78%; 70% and 60%; raw and roasted menengic candy samples, respectively. The panelists liked both of the candy types, with high score for roasted samples due to effect of roasting process on its taste and flavor characterization.
