Bu araştırmada Z. mobilis bakterisinin melastan etilalkol üretme yeteneği araştırılmış ve sonuçlar maya ile elde edilenlerle kıyaslanmıştır. Her iki Z. mobilis suşu da, çok uzun fermentasyon sürelerinde bile, şekerin etilalkole dönüşümünü tamamlayamamıştır. En yüksek teorik etanol verimi (%79), 125.4 g/l şeker içeren melas mayşesinde Z. mobilis AL 95 suşu ile elde olunmuştur. Buna karşın, maya şekerin tümünü etilalkole dönüştürmüş ve Z. mobilis’e oranla önemli ölçüde fazla etilalkol üretmiştir.

The ability of Z. mobilis to produce ethanol from molasses has been investigated and results were compared with those obtained with yeast. Neither strain of Z. mobilis could complete the conversion of sugar to ethanol, even with very long fermentation times. The highest theoretical ethanol yield (79%) was obtained with AL 95 in molasses medium containing 125.4 g/l sugar. However, yeast completed the conversion of sugar and produced considerably more ethanol than Z. mobilis.
