Türk Fermente Sucuğundan İzole Edilen Laktobasillerin Antibakteriyel Etkilerinin Saptanması

Bu çalışma, Türk fermente sucuğundan izole edilen değişik laktobasil türlerinin (104 suş L.sake,9 suş L. curvatus,4 suş L. plantarum) L. monocytogenes ile S. aureus 'akarşı antibakteriyel etkilerini saptamak amacıyla yapıldı. Laktobasil türlerinin antibakteriyel etkileri agar spot test ve agar kuyu difüzyon testine göre yapıldı. Analiz sonuçlarına göre test edilen L.sake suşlarının 18'i, L.curvatus suşlarının3'ü ile L. plantarum suşlarının 2'si agar spot testinde L monocytogenes 'ekarşı inhibisyon zonu oluşturmalarına karşın, agar kuyu difüzyon testinde 7 adet L. sake,1 adet L. curvatus ve 1 adet L. plantarum suşu inhibisyon zonu oluşturmuştur. Aynı şekilde test edilen L. sake suşlarının 8'i ile L. curvatus ve L. plantarum suşlarının birer adedi, agar spot testinde S.aureus 'akarşı inhibisyon zonu oluşturmalarına karşın, agar well difüzyon testinde L. sake suşlarından 4'ü inhibisyon zonu oluştururken L. curvatus ve L. plantarum suşları inhibisyon zonu oluşturmamıştır. Sonuç olarak laktobasil türlerinin antibakteriyel etkilerinin öncelikle kullanılan metotlara ve test edilen laktobasil suşlarına göre farklılıklar gösterdiği saptanmıştır. Fermente sucuk üretiminde L. monocytogenes ve S.aureus 'ungelişiminin kontrol altına alınması için, bakteriyosin ve/veyabakteriyosin benzeri metabolit oluşturan laktobasillerin, gerekli testleri yapıldıktan sonra starter kültür olarak kullanılması önerilir.

Antibacterial Activity of Lactobacilli Isolated from Turkish Fermented Sausages (Sucuk) (Turkish with English Abstract)

This study was undertaken to determine of antibacterial activities of different Lactobacilli strains (104 strains L. sake,9 strains L. curvatus,4 strains L plantarum)isolated from Turkish fermented sucuk, against to L. monocytogenes and S. aureus. The antibacterial activities of lactobacilli species were determined with agar spot test and agar well diffusion test. For the analysis results, 18 of L. sake strains, 3 of L.curvatus strains and 2 of L. plantarum strains and 2 of L. plantarum strains, as tested, were formed inhibition zone against to L. monocytogenes in agar spot test, although 7 of L sake,1 of L. curvatus and 1 of L plantarum strain was formed inhibition zone in the agar well diffusion test. In agar pot test, 8 of L sake and one of L.curvatus and L plantarum strains were formed inhibition zone against to S. aureus,while in the agar well diffusion test, 4 of L. sake strains were formed inhibition zone but, L.curvatus and L. plantarum stains were not formed inhibition zone.As a conclusion, antibacterial activities of lactobacilli species were variable both in species and in strains, therefore, it was suggested that bacteriocin and/or bacteriocin-like metabolites formed by lactobacilli should be used as a starter culture for controlled the growth of L.monocytogenes and S.aureus in the fermented sausages producing, after necessary tests were applied.
