Saccharomyces Dışındaki Mayaların Şarap Aromasına Etkileri

S. cerevisiae şarap fermantasyonundan sorumlu asıl şarap mayası olmakla birlikte, non-Saccharomyces olarak adlandırılan, Saccharomyces cinsi dışındaki mayalar gliserin, yüksek alkoller, esterler gibi ikincil metabolitler üreterek şarap aromasına katkıda bulunmaktadırlar. S. cerevisiae’nın aksine, Saccharomyces dışındaki mayalar glikozidazlar, esterazlar, lipazlar, β-glukozidazlar, proteazlar gibi enzimler üretme yeteneğindedirler. Bu enzimler üzümdeki öncül aroma maddeleri ile interaksiyona girerek, şarap aromasında önemli rol oynayan aktif aroma bileşikleri oluştururlar. Şarap fermantasyonu boyunca Saccharomyces dışındaki maya türlerinin gelişimi fermantasyonun ilk üç günü ile sınırlı olup, sonra sayıları hızla azalır. Asıl şarap mayası olan S. cerevisiae ortama hâkim olur ve fermantasyonu tamamlar. Saccharomyces dışındaki mayalar enolojik koşullarda rekabet edemediklerinden, şarap üretiminde yüksek fermantasyon gücüne sahip S. cerevisiae ile birlikte karışık starter kültür olarak kullanılabilirler. Bu yolla, şarapların aromatik yönden zenginleştirilmeleri sağlanmış olur.

Effects of Non-Saccharomyces Yeasts on Wine Aroma (Turkish with English Abstract)

Although S. cerevisiae is major wine yeast responsible for wine fermentation, the yeasts other than genus of Saccharomyces, which are called non-Saccharomyces, contribute to wine aroma producing secondary metabolites such as glycerol, higher alcohols and esters. Contrary to S. cerevisiae, the non-Saccharomyces yeasts are able to produce and release several enzymes such as esterases, glycosidases, lipases, β-glycosidases, proteases to the medium where they can interact with grape precursor compounds to produce aroma active compounds and thus play an important role in wine aroma. During the wine fermentation, the growth of non-Saccharomyces yeast species is limited to the first 3 days of fermentation and then suddenly they die off. The major wine yeast, S. cerevisiae dominate and complete the fermentation. Since they are not competitive in oenological conditions, non-Saccharomyces wine yeasts can be used as starter cultures in wine production together with strongly fermentative S. cerevisiae strains to ensure the completion of fermentation. In this way, the enrichment of wine aroma is achieved by combined action of Saccharomyces cerevisiae and non-Saccharomyces yeasts.
