Nevşehir-Ürgüp Yöresi Şarapçılık Beyaz Emir Üzümü Üzerinde Teknolojik Araştırma

Bu çalışmada, Nevşehir-Ürgüp yöresi Emir üzümleri ile gerçekleştirilen denemelerde şarap yapımında uygulanan işlemlerden fermentasyon sıcaklığı ve şıraya bentonit uygulaması ele alınmıştır. Üzümler, üzüm ezme değirmeninden geçirilerek ezilmiş ve horizantal bir preste sıkılmıştır. Elde edilen şıra 500’er l’lik dört ayrı tanka eşit miktarlarda dağıtılmıştır. Tanklardan ikisi sıcaklığı 23-24 oC olan bir odaya diğer ikisi de sıcaklığı 18 oC olan diğer bir odaya alınmıştır. Her odadaki iki tanktan birine 0.4 g/l bentonit ilave edilmiştir. Fermantasyondan sonra şaraplar sıcaklığı 10 oC olan bir odada dinlendirilmiş ve süzme işleminden sonra şişelenmiştir. Elde olunan şarapların kimyasal ve duyusal analizleri yapılarak uygulanan işlemlerin kalite üzerindeki etkileri incelenmiştir. Denemelerden elde edilen sonuçlar, fermantasyon sıcaklığını 18 oC civarında tutmanın ve bentonit uygulamasının şarapların kalitesini olumlu yönde etkilediklerini göstermiştir.

A Technological Research Study on the Processing of Wine from White Emir Grapes Grown in Nevşehir-Ürgüp Region of Turkey (Turkish with English Abstract)

In this study, effects of fermentation temperature and bentonite on the quality of wine made from Emir variety of grapes of Nevşehir-Ürgüp region were determined. Grapes were crushed through roller-crusher and pressed in a horizontal press. The grape juice was divided into four separate fiberglass containers of 500 litre. Two of these containers were kept at 23-24 oC, and the other two containers were kept at 18 oC during fermentation. Before the fermentation 0.4 g/l bentonite was added into one of the containers in each group. After fermentation the wines were stored at 10 oC, and filtered prior to bottling. Then, chemical and sensory analyses were realised and, the influence of treatments on quality was determined. The results of the experiments showed that the fermentation at 18 oC and addition of bentonite had a positive effect on the quality of wine.
