Kurşun, Kalay ve Nikel'in Ayçiçek Yağı ve Tahinde Depolama Süresince Birikimi

Gıda sanayiinin temel ambalaj maddelerinden birisi olan metal kutular uzun yıllardır özellikle meyve ve sebze ürünlerinde üretimden tüketime kadar geniş bir kullanım alanı bulmuştur. Bu yakın temas sonucundan her ikisi de bulundukları şartların (temas süresi, sıcaklık, vb) etkisi ile diğeri üzerinde istenmeyen etkiler yaratmışlardır. Bu etkilerin insan sağlığı açısından en önemlilerinden biriside metal kutudan kaynaklanan, gıda maddesinde özellikle ağır metallerin birikimidir. Çalışmamızda, ayçiçek yağı ve tahin için değişik depolama şartlarında (sıcaklık ve zaman) metal birikmesi tespit edildi. Gıdalar 5°, 25° ve 35°C de depolandı ve belirli zaman aralıklarında, örneklerde kurşun, kalay ve nikel miktarları analizi yapıldı. Sabit sıcaklıklarda, zamana bağımlı metal miktarı grafikleri çizildi. Bunlarla beraber, her bir sıcaklıkta peroksit değerleri zaman değişimi ile birlikte tespit edildi. Teneke (tahin için) kutuda, kalay kaplı (ayçiçek yağı için) kutuya göre birim gıdada kurşun birikmesi daha fazla gözlendi. Bununla beraber kalay birikiminin teneke kutuya göre kalay kaplı kutuda daha fazla olduğu tespit edildi. Genel olarak, gıda maddesinin peroksit değerinin, depolama zamanı ve sıcaklığının artması ile metal konsantrasyonunda da artış olduğu tespit edildi.

Accumulation of Tin, Lead, and Nickel in Sunflower and Sesame Oil (Turkish with English Abstract)

Contamination may arise from a number of different sources. Thus, crops will contain various amounts ol contaminants according to the nature of the soil, fertilizer and/or insecticide treatment and industrial activity. Harvesting, storage, processing and packaging (canning etc.) may also affect the level of contaminants in the food as consumed. Not all such processes will increase the contamination; rejection of outer leaves, washing and cooking may lead to a reduction. The elements of most concern are cumulative poisons that are those that cause injury to health through progressive and irreversible accumulation in the body as a result of ingestion of repeated small amounts. As well as causing toxicological risks, contamination with some elements can have damaging effects on flavor and appearance. In these study, accumulations of some metals were determined for food samples at different storage conditions (temperature and time). Sunflower and sesame oil were used at three storage temperatures which were 5°C, 25°C, 35°C. At constant temperature, metal content versus time graphs were drawn, and also peroxide value (PV) for sunflower and sesame oil were determined in each temperature with time. it was found that, lead, tin and nickel content were observed to increase with time and temperature. Tin content was increased higher than others, because of cans are tin plated. In general, with decreasing of PV level and increasing of storage time and temperature, the metal concentration of oils were increased.
