Elma Suyu ve Konsantrelerinde Hidroksimetilfurfural (HMF). II. Farklı Elma Suyu Konsantrelerinin Depolanması Sürecinde Hidroksimetilfurfural Oluşumu ve Buna Bağlı Olarak Bazı Bileşim Ögelerinde Meydana Gelen Değişmeler

Bu araştırmada, ülkemizde büyük miktarda üretimi yapılan Amasya, Golden delicious ve Hüryemez çeşidi elmalarından elde edilen elma suyu konsantrelerinin depolanması sürecindeki hidroksimetilfurfural oluşumu incelenmiştir. Bu çeşitlerin seçiminde sadece üretim miktarları değil, aynı zamanda genellikle farklı asitlik değerinde olmaları da gözönünde bulundurulmuştur. Konsantreye işleme 50 oC’de yapılmış, daha sonra elde edilen konsantratlar –18 oC, +4 oC ve +16 oC sıcaklıkta 9 ay süre ile depolanmıştır. Bu süre içinde örneklerin başlıca kimyasal nitelikleri üçer aylık aralıklarla incelenmiştir. Bu amaçla örneklerin titrasyon asitlikleri (malik asit cinsinden), indirgen şeker miktarları, formol sayıları ve hidroksimetilfurfural miktarları saptanmıştır. Elde edilen sonuçlar istatistiksel yöntemler kullanılarak değerlendirilmiştir. Depolama süresi ilerledikçe her üç örnekte oluşan HMF miktarlarında devamlı olarak artış gözlenmiştir. HMF miktarındaki bu artış üzerinde çeşit özelliğinin ve depolama sıcaklıklarının etkisinin önemli olduğu görülmüştür. Her üç çeşide ait konsantre örneklerinde oluşan HMF miktarları, depo sıcaklıklarının yükselmesine paralel olarak artmıştır. +4 oC’de depolanan örneklerdeki artış, +16 oC’ye kıyasla daha az olurken; -18 oC’de depolanan konsantre örneklerinde hiçbir değişiklik gözlenmemiştir. Depolama sürecinde HMF oluşumuna paralel olarak bazı bileşim ögelerinde de değişiklikler olmuştur. Konsantrelerde, çeşitlere de bağlı olarak, depolama süresi uzadıkça, yüksek sıcaklıkta depolananlarda daha fazla olmak üzere, HMF miktarlarının sürekli artışına paralel biçimde formol sayısında devamlı olarak azalma görülmüş, indirgen şeker miktarları ise sakkarozun inversiyonu ile sürekli artmıştır. İndirgen şeker miktarlarındaki artış pH değeri en yüksek olan Amasya konsantresinde en az, pH değeri en düşük olan Hüryemez konsantresinde en çok olmuştur.

Hydroxymethylfurfural (HMF) in Apple Juices and Concentrates II. HFM Formation during Storage of Different Apple Juices and Concentrates and Changes Occurring in Some Components (Turkish with English Abstract)

In this study, the formation of Hydroxymethylfurfural (HMF), in the concentrates of Amasya, Golden delicious and Hüryemez varieties of apple during the storage have been investigated. These varieties of apple were chosen since they had great production potential and different pH values. Apple juices were concentrated at 50 oC in rotary vacuum evaporator to the degree of 70% of the refractometry extract. The concentrates were then stored at –18 oC, +4 oC and +16 oC in three groups for 9 months. The chemical analysis (titratable acidity, reducing sugar, formol titration and HMF content) were performed for 3 months interval. Statistical evaluation of the collected data was carried out by factorial variance analysis. The HMF contents of three types of concentrates increased with the rise in temperature during the storage. But the increase in HMF content of samples stored at +4 oC was determined to be lower then the ones stored at +16 oC. However, no statistically significant increase was observed in HMF content of samples stored at –18 oC. A regular correlation was obtained among the increase of HMF content and changes in other components of concentrates during storage of the samples. It was found that the storage time had an important effect on the increase of HMF content. The accumulation of HMF was determined to be more as the time of storage of concentrates lasted longer. High storage temperature caused increase in HMF content of all samples stored at +4 oC and +16 oC. A parallel relation was observed between the increase of HMF content and decrease of formol number while the reducing sugar content increased due to the inversion of sucrose. The rate of increase in reducing sugar content was found to be related with pH of concentrates and the lower pH value the sample had, the more increase in reducing sugar content was observed.
