Bu çalışmada, Elazığ Kapalı Çarşısı’nda satışa sunulan Erzincan Tulum (Şavak) Peynirinden 17, Taze Beyaz Peynirden 21 örnek alınmış ve koliform grubu bakterileri izole edilerek tanımlanması yapılmıştır. Toplam 618 kültürün tanımlanmasında İMViC testi ile beraber farklı biyokimyasal özellikleri de ele alınmıştır. Erzincan Tulum Peynirinden izole edilen 316 adet koliform suşundan 72’si Escherichia coli tip I, 32’si E. coli Tip II, 76’sı Enterobacter aerogenes, 55’i E. cloacae, 31’i Citrobacter sp., 14’ü Klebsiella aerogenes, 28’i K. pneumoniae olarak belirlenmiştir. Taze Beyaz Peynirden izole edilen 302 adet koliform suşundan 86’sı E. coli tip I, 42’si E. coli Tip II, 91’i E. aerogenes, 34’ü E. cloacae, 22’si Citrobacter sp., 5’i K. aerogenes, 11’i K. pneumoniae olduğu tespit edilmiştir. İzole edilen toplam 19 suş ise tanımlanamamıştır.    

Coliform group bacteria were isolated and identified from 17 samples of the Erzincan Tulum (Şavak) Cheese and 21 samples of the freshly formed white cheese which are marketed in the Closed Shopping District in Elazığ. Different biochemical characteristics and IMViC tests were obtained from identification of 618 cultures.            Total 316 coliform strains have been identified in the Erzincan Tulum cheese, consisted of 72 Escherichia coli tip I, 32 E. coli Tip II, 76 Enterobacter aerogenes, 55 E. cloacae, 31 Citrobacter sp., 14 Klebsiella aerogenes, 28 K. pneumoniae and the freshly formed white cheese, consisted of 86 E. coli tip I, 42 E. coli Tip II, 91 E. aerogenes, 34 E. cloacae, 22 Citrobacter sp., 5 K. aerogenes, 11 K. pneumoniae. Nineteen strain couldn’t be identified.
