Depolama Sıcaklığı ve Modifiye Atmosferde Ambalajlamanın Gökkuşağı Alabalığı Filetolarının Toplam Bakteriyel Yük ve Renk Değerleri (L*, a*,b*) Üzerine Etkileri
Araştırmada depolama sıcaklığı (4 ve 10 oC) ve değişik atmosfer şartlarının (hava, vakum, %100 CO2, %2,5 O2- %7.5 N2-%90 CO2, %30 O2-%30 N2-%40 CO2) gökkuşağı alabalığı filetolarının toplam bakteri sayısı ve renk değerleri üzerine etkileri incelenmiştir. Muhafaza sıcaklığı 4 oC olduğunda gökkuşağı alabalık filetolarının farklı iki inkübasyon sıcaklığında (25 oC’de 3 gün ve 37 oC’de 2 gün) belirlenen toplam bakteri sayıları üzerinde depolama süresi, atmosfer ve depolama süresi X atmosfer interaksiyonunun çok önemli (p<0,01) etkileri tespit edilmiştir. Depolama süresinin hem L* değeri hem de a* değeri üzerinde çok önemli (p<0,01) etkilerinin olduğu belirlenmiştir. Atmosfer şartlarının da her iki değer üzerinde çok önemli (p<0,01) etkileri görülmüştür. Filetoların b* değeri üzerinde ise her iki faktörün de önemli bir etkisi olmamıştır(p>0,05). Depolama sıcaklığı 10 oC olduğunda toplam bakteri sayısı üzerine depolama süresi ve atmosfer faktörleri çok önemli (p<0,01) etkilerde bulunurken, depolama süresi X atmosfer interaksiyonunun etkisi önemsiz bulunmuştur (p>0,05). Filetoların L* değerleri üzerine depolama süresi çok önemli (p<0,01) etkide bulunmuştur. Atmosfer ile depolama süresi X atmosfer interaksiyonunun bu değer üzerine etkisi olmamıştır (p>0,05). Filetoların a* ve b* değerlerine ise ana varyasyon kaynaklarının etkileri önemsiz (p>0,05) bulunmuştur.
The Effects of Storage Temperature and Packaging with Modified Atmosphere on Total Bacterial Flora and Color Values (L*, A*, B*) of Rainbow Trout (Oncorhynchus Mykiss) Fillets (Turkish with English Abstract)
In this research, the effects of storage temperature (4 and 10 oC) and different atmosphere conditions (air, vacuum, 100% CO2, 2.5 %O2- 7.5 %N2-90% CO2, 30% O2-30% N2-40% CO2) on total bacterial flora and color values were investigated. Storage time, atmosphere and storage time atmosphere interaction were important (p<0.01)on total bacteria count determined at 4 oC with two different incubation temperatures (3 days at 25 oC’ and 2 days at 37 oC). There were significant effects (p<0.01) of storage time and atmosphere conditions on both L* and a* values. However there were no significant (p>0.05) effects of both factors on b* values of fillets. When storage time 10 oC, the effects of storage time and atmosphere factors on total bacteria count were significant (p<0.01), but the effects of storage time x atmosphere interaction was not important (p>0.05). The effects of storage time was significant (p<0.01) on L* values of fillets, however there were no significant effects (p>0.05) of atmosphere and storage time x atmosphere interactions on this values. The effects of main variation sources on a* and b* values of fillets were insignificant (p>0.05).
