Denizli İlinin Değişik Rakımlı Alt Bölgelerinden Sağlanan Çalkarası Üzümlerinden Elde Edilen Pembe Şarapların Aroma Maddelerinin Belirlenmesi

Bu çalışmada, Denizli ilinin değişik rakımlı alt bölgelerinden Selcen ilçesinde ve Çal ilçesinin Sazak ve Karakaya köylerinde yetiştirilen Çalkarası üzümü ve bu üzümlerden elde edilen pembe şarapların aroma maddeleri belirlenmiş ve rakım farkının aroma maddeleri üzerine etkisi araştırılmıştır. Şaraplarda aroma maddelerinin ekstraksiyonu sıvı-sıvı ekstraksiyon yöntemi ile, tanımlanması, miktarları ve olfaktometrik değerlendirilmesi ise GC-MS-FID ve GC-MS-O teknikleri ile gerçekleştirilmiştir. En yüksek aroma maddesi miktarı düşük rakımlı Selcen alt bölge şaraplarında belirlenmiştir ve bunu sırasıyla Karakaya ve Sazak alt bölge şarapları takip etmiştir. Olfaktometrik analiz sonuçlarına göre Çalkarası pembe şaraplarında belirlenen baskın aroma aktif bileşikler; etil oktanoat, izoamil asetat, etil hekzanoat, etil bütanoat, etil dekanoat, bütanoik asit, izoamil alkol, 2-fenil asetat ve 2 fenil alkol olarak belirlenmiştir. Çalkarası pembe şarapları duyusal açıdan birbirine yakın bulunmuştur. Selcen şarabı lezzet profilinde aroma açısından en yüksek puanı almış ve bunu Karakaya ve Sazak izlemiştir (P<0,05). Aroma profil analizinde ise meyve, tropik meyve ve çiçeksi kokular ön plana çıkmıştır. Genel olarak Selcen şarabı daha çok beğenilmiştir.

Determination of Aroma Compounds of Rose Wines from a Variety of Calkarasi Grapes Obtained from Sub-Regions at Different Altitude in Denizli (Turkish with English Abstract)

In the study, aroma substances of rose wines which are made from Çalkarası grapes, that collected from various altitude regions of Denizli, town of Selcen and villages Sazak and Karakaya from town of Çal, are identified and differences of these substances are studied with respect to change in the altitude. Aroma extraction of wines is made by using liquid-liquid extraction method and the amount, identification and olfactometric evaluation is made by using GC-MS-FID and GC-MS-O technics. The highest amount of aroma compounds is found in Selcen sub-region (low altitude) and followed by Karakaya and Sazak, respectively. Results obtained from olfactometric analysis showed that most potent aroma compounds in Çalkarası rose wines are ethyl octanoate, isoamyl acetate, ethyl butanoate, ethyl decanoate, butanoik acid, isoamyl alcohol, 2-phenyl acetate, 2-phenyl alcohol. In terms of sensory analysis sub-region Çalkarası rose wines are found almost similar to each other. According to flavor profile Selcen wine is ranked the highest followed by Karakaya and Sazak (P<0.05). Also, fruity, tropical fruit and flowery odors are found potent in the results of aroma profile analysis. Lastly, in general, Selcen wine is appreciated the most.
