Bu araştırmada, değişik sürelerde depolanan Isola, Marfona, Granola ve Famosa patates çeşitlerinin yumrularında meydana gelen bazı fiziksel ve kimyasal değişiklikler incelenmiştir. Bu amaçla yürütülen araştırma 2.11.1990 tarihinden itibaren 14 gün aralıklarla 140 gün süre ile devam ettirilmiştir. Elde edilen bulgulara göre, depolama süresince bağlı olarak yumru ağırlığı azalmış, cips verimliliği ve cipsin yağ çekme oranları artmış, protein oranındaki değişim kararsız olmuş, yumruların kuru madde, özgül ağırlık ve nişasta oranı arasında değişiklik olmamıştır. Depolama süresi içerisinde patates çeşitleri arasında yumru ağırlığı, kuru madde, özgül ağırlık, nişasta ve protein verimi ve yağ çekme oranları bakımından ise herhangi bir farklılık görülmemiştir. İncelenen karakterler arasında kuru madde ile özgül ağırlık ve nişasta oranı arasında, özgül ağırlık ile de nişasta oranları arasında olumlu ve önemli ilişkiler bulunmuştur. Depolama süresi boyunca patates çeşitlerinden Isola’nın incelenen karakterler yönünden diğer patates çeşitlerine göre daha üstün olduğu anlaşılmıştır.   

The physical and the chemical changes which are formed within the tubers of Isola, Marfona, Granola and Famosa varieties of potatoes were examined in this study. The research conducted for this aim, continued for 140 days with intervals of 14 days since November 2, 1990. According to the data, dealing with the period of storage; the tuber weight was decreased while the chips productivity and the oil absorption rate increased and the change in the protein contents occurred among potatoes varieties, but it did not have any effect on chips productivity and the oil absorption rate. Important and positive relation have been found among the characteristics such as dry matter, specific gravity and starch content and between the ration of the specific gravity and starch content. It has been concluded that the Isola variety of potatoes was superior to the other varieties in respect to the characteristics which were examined during storage period.
