Bazı Soya Çeşitlerinden Elde Edilen Ham Yağların Fiziksel ve Kimyasal Özelliklerinin Saptanması Üzerinde Araştırmalar

Bu araştırmada 12 çeşit soya örneği analiz edilmiştir. Örneklerden ortalama nem %8.0, protein %36.4, yağ ise %22.7 olarak bulunmuştur. Soyaların yağları hegzanla alınmış ve analiz sonucunda bütün çeşitlerin ortalama kırılma indisi 1.4720, iyot sayısı 128, sabunlaşma sayısı 193, % serbest yağ asitleri 0.3 olarak bulunmuştur. Soya yağlarının yağ asitleri kompozisyonu gaz kromatografisi ile saptanmıştır. Örnekler de, % olarak ortalama miristik asit 0.04, palmitik asit 11.07, palmitoleik asit 0.04, heptadokanoik asit 0.02, stearik asit 4.56, oleik asit 26.99, linoleik asit 50.93, linolenik asit 5.81, araşidik asit 0.04, behenik asit 0.35 olarak bulunmuştur. Her yağ asidi açısından çeşitler arası farkın önemli (P<0.05) olduğu saptanmıştır. Yağ teknolojisi açısından yağ oranı yüksek fakat linolenik asit oranı düşük çeşitler tercih edilmektedir. Daha en uygun çeşitler 24-B-216 ile W2-7850’dir.

A Study on the Determination of Physical and Chemical Properties of Crude Oils Obtained from Soybean Varieties (Turkish with English Abstract)

In this study, chemical properties of crude oils of 12 different soybean varieties were analysed. Average moisture, protein and oil contents of samples were found to be 8.0, 36.4 and 22.7 percent respectively. The oils of soybeans were taken out by hexane. The physical and chemical analyses of the oil samples showed that average refractive index is 1.4726, iodine value (wijs) 128, saponification value 193, free fatty acid 0.3%.           Gas chromatographic analyses of the samples showed that the average fatty acid composed of 0.04% myristic acid, 11.07% palmitic acid, 0.04% palmitoleic acid, 0.02% heptadecanoic acid, 4.56% stearic acid, 26.99% oleic acid, 50.93 linoleic acid, 5.81% linolenic acid, 0.04% arachidic acid, 0.35% behenic acid. It was found that there were significant differences (P<0.05) among the varieties related to their fatty acid contents.            In respect of oil technology, soybean varieties higher in oil content and lower linoleic acid are preferred. Therefore according to this study 24-B-216 and W2-7850 are the more suitable soybean varieties and may be proposed.
