TURİSTLERİN GIDA KARAR SÜRECİNDE ETKİLİ OLAN FAKTÖRLERİN BELİRLENMESİ
Gıda tüketimi, günümüzde turizmin vazgeçilmez bir parçası ve turizm hareketlerinde de önemli bir motivasyon kaynağıdır. Diğer bir açıdan ise gıda kavramı destinasyonların pazarlanması ve tanıtılmasında son derece önemli bir unsurdur. Bir destinasyonda gıda kültürünün gelişim göstermesi ve farklı talep unsurları tarafından destinasyonun gıda kültürünün bilinirliğinin artması bölge turizmi için son derece önem taşımaktadır. Bu bağlamda bir destinasyonu ziyaret eden bireylerin gıda tüketim davranışlarının incelenmesi son derece önemlidir. Turistlerin gıda karar sürecinde etkili olan faktörleri belirlemek amacına yönelik yapılan bu araştırmada ilk olarak gıda karar sürecine ilişkin alanyazın taraması yapılarak kuramsal bilgilere ulaşılmıştır. Bunun neticesinde de birincil verilerin toplanma aşamasına geçilmiş ve veri toplama aracı olan anket tekniğinden yararlanılmıştır. Araştırmanın anket formu 2 bölümden ve toplamda 65 sorudan oluşmaktadır. Anket formunun birinci bölümü katılımcıların sosyo-demografik özellikleri ve seyahat davranışlarına ilişkin 12 sorudan oluşurken anketin ikinci bölümünde ise turistlerin gıda karar sürecinde etkili olan faktörleri belirlemeye yönelik Mak vd., (2012)’nin çalışmasına dayanarak Martinez (2015) tarafından geliştirilen turistlerin gıda kararında etkili olan ifadeleri içeren 5 boyut (Kültürel ve Dini Faktörler; Sosyo-Demografik Faktörler; Motivasyon Faktörleri; Kişisel Tercihler ve Geçmiş Deneyimler) 53 ifade yer almaktadır. Araştırma sonucunda ise; turistlerin gıda karar sürecinde etkili olan faktörlerin ilk ve en çok olarak “Duyusal Çekicilik” faktörü, ikinci olarak “Kültürel ve Otantik Deneyim” faktörü daha sonra “Geçmiş Deneyim” dördüncü olarak “Kişisel Tercih” faktörü beşinci olarak “Yerel Gıda ve Özgünlük” faktörü altıncı olarak “Aşinalık ve Gıdaya İlişkin Tecrübe” faktörü, son ve en az olarak da “Hatıra ve Öğrenme İsteği” faktörünün etkili olduğunu söylemek mümkündür
Designation of the Influential Factors during the Food Decision Process of the Tourists at the Destination
Food consumption is an indispensable part of tourism today and is also an important source of motivation in tourism movements. On the other hand, the concept of food is an extremely important factor in the marketing and promotion of destinations. The growing popularity of food culture in a destination and the increasing awareness of food cultures destined for different demand elements is of utmost importance for tourism in the region. In this context, it is extremely important to examine the food consumption behavior of individuals visiting a destination. In this study, it is aimed to determine the factors that are effective in the food decision process of tourists. The study consists of five basic parts. In the introductory part of the first part of the work, the problem of work, the aim, the precaution, the assumptions, the limitations and the definitions are included. In the second part, the related literature is given. In the method part which is the third part of the study, the model of the research, the universe and the sample, the data collection tool and technique, and the data collection process are discussed. The fourth part consists of the findings and interpretations of the research and the fifth and final part consists of the conclusions obtained in the in the light of the findings and suggestions regarding to these conclusions. The data used in the study were obtained by the questionnaire method and evaluated by means of statistical analyzes. As a result of the research, it was determined that there was a significant and positive relationship between the food decision process of the tourists and the factors affecting the food decision process.
