Bu çalışmada; çiğ sütün, ısısal işlem uygulanmış içme sütlerinin, yoğurt koyulaştırılmış ve kurutulmuş süt mamulleri ile dondurma, peynir, krema ve tereyağının soğukta ve özellikle dondurularak depolanmaları incelenmiştir. Bu arada süt ve mamullerinin saklama nedenleri, saklamada ortaya çıkan sorunlar, depolamada dikkat edilecek noktalar ve hangi koşullarda ne kadar süre depolanabilecekleri konuları üzerinde durulmuştur.

In this study cold frozen storage of raw and heat processed drinking milk, dried milk products, cream, ice cream, cheese and butter was investigated with the emphasis on the problems that may be encountered during storage and the duration of storage stability under different storage conditions.
