Bulgur Üretiminin Buğdayların bazı Kimyasal Özelliklerinde Meydana Getirdiği Değişiklikler

Bu çalışmada bulgur üretiminin buğdayların protein, kül, b-karaten ve Lovibond kolorimetre ile belirlenen R (kırmızılık), Y (sarılık), O (opaklık) değerlerinde meydana getirdiği değişiklikler incelenmiştir. Araştırmada 29 adet saf buğday örneği (23 adet durum ve 6 adet ekmeklik) kullanılmıştır. Buğdaydan bulgura geçerken protein miktarındaki bir değişiklik meydana gelmemiş, kül miktarında ise önemsiz derecede bir azalma tespit edilmiştir. Buğdayın bulgura dönüştürülmesi ile b-karoten miktarında düşüş olduğu saptanmıştır. Lovibond  kolorimetre ile tespit edilen R, Y, O değerlerinde de bir azalma olmuştur. Bu çalışmada makarnalık ve ekmeklik buğdaylarla, onlardan hazırlanan bulgurlara ait protein, b-karoten ve kül değerleri (p<0.01) arasında önemli ilişki olduğu belirlenmiştir. Ayrıca, buğday unu, buğday kırması ve bulgura ait kül değerleri ile Lovibond kolorimetre ile belirlenen R ve Y değerleri arasında önemli bir düzeyde negatif bir ilişki olduğu belirlenmiştir (p<0.05).

The Effects of Bulgur Production on Various Chemical Properties of Wheats (Turkish with English Abstract)

In this research, the effects of bulgur production on protein, ash, b-carotene and Lovibond colorimeter values of wheat were investigated. Grains of 29 Turkish wheat cultivars (23 of durum and 6 of common wheat) were used in this study. During the transition from wheat to bulgur, while no change was observed in protein content, a slight decrease was obtained in ash content. A decrease was observed in b-carotene content from wheat to bulgur. There were decreases in the R, Y, O values of the samples as determined by Lovibond colorimeter. In this study, there were significant correlations calculated between the protein, b-carotene and ash contents (p<0.01) of the wheat and corresponding bulgur samples for both durum and common wheat. In addition, the significant negative correlations were obtained between the ash contents of wheat flour, wheat meal and bulgur samples and the R and Y values of Lovibond colorimeter results (p<0.05).
